Our Story

Rooted in Japan. Crafted in San Diego. Founded in 2016 in the heart of San Diego's East Village, Beshock Ramen & Sake Bar was created with a passion for sharing authentic Japanese food, culture, and hospitality. Inspired by the culinary traditions of Nagoya, Japan, Beshock brings together carefully crafted ramen, thoughtfully selected sake, and the welcoming spirit of Japanese dining. Our name comes from the Japanese word Bishoku (美食), meaning "beautiful food" or "gourmet cuisine." It reflects our belief that great food is more than just a meal—it's an experience worth sharing.

Broth, Rice, and No Shortcuts

A Dedication to Craft At Beshock, quality begins with the details. From broths simmered in-house for 8–10 hours to carefully selected ingredients and custom noodles, every bowl reflects our commitment to Japanese craftsmanship. Our East Village location specializes in rich, silky Tori Paitan chicken broth, while our Carlsbad location highlights the deep, savory flavors of traditional Tonkotsu ramen.

More Than Ramen Sake has always been an essential part of the Beshock experience. Led by co-founder and certified sake sommelier Ayaka Ito, our curated sake selection celebrates the craftsmanship, traditions, and diversity of Japan's breweries.

Up north, our Carlsbad location on El Camino Real gives North County the same bowls and same sake list in a more laid-back setting. Pick whichever is closer, the experience travels with you.
