Beshock Ramen & Bar was built around owner and sake sommelier Ayaka Ito, who brought recipes and relationships from her hometown of Aichi, Japan to San Diego. Her own Aya sake series, brewed by Sekiya Brewery back home, sits alongside limited releases most restaurants never get access to. This isn't a ramen shop that happens to serve sake, it's a sake bar that happens to serve incredible ramen too.

Every bowl starts with broth built over hours, whether it's the black garlic Tori Paitan or the creamy sesame vegan option, and every roll uses Edomae Akazu rice aged three to five years for real depth instead of plain vinegar sweetness. Koji-marinated chicken, housemade gyoza sauce, and hand-cut chashu round out a menu that treats technique as seriously as flavor.
